Simple Elderberry Immune Gummies
winter support for the whole family
Winter has arrived in Australia, and the evenings are turning chilly. It’s that time of year when little ones start bringing home every bug that’s going around, and adults can quickly find themselves run down if they’re not taking good care of themselves.
When I received a notice from my son’s school that a virus was making its way through the classrooms and keeping more and more children at home, I knew it was time to pull out one of my favourite winter remedies.
These elderberry gummies are a simple way to support the whole family’s immune system during the colder months. They’re packed with traditional herbal goodness, taste delicious, and are a wonderful addition to your winter wellness toolkit when seasonal bugs start making the rounds. You can use your own homemade Elderberry syrup recipe or a high-quality store-bought elderberry syrup ( for people in Norther Rivers NSW - Santos Organics in Mullum has it)
Ingredients from the medicinal cabinet
1 cup Elderberry syrup or store bought
3 tablespoons grass-fed gelatin
1 teaspoon fresh lemon juice (optional)
How to make these witchy potions:
Pour the elderberry syrup into a small saucepan and gently warm over low heat. Do not boil, as excessive heat may damage some of the beneficial compounds.
Slowly sprinkle the gelatin over the syrup while whisking continuously to prevent clumping. Continue whisking until the gelatin is completely dissolved and the mixture is smooth. Remove from heat and stir in the lemon juice if using. Pour into silicone gummy moulds or a small glass dish.
Refrigerate for 1–2 hours until firm.
Store in an airtight container in the refrigerator for up to 2 weeks.
Suggested Serving
Children: 1–2 gummies daily*
Adults: 2–4 gummies daily
*Adjust according to the size of your gummies and individual needs.
The Benefits of Each Ingredient
Elderberry Syrup (Sambucus nigra)
Elderberries have a long history of use in traditional herbal medicine for supporting the immune system. They are rich in anthocyanins and flavonoids, which provide antioxidant support and help protect the body from oxidative stress. Elderberry is commonly used during seasonal immune challenges and may help support the body’s natural defence mechanisms.
Gelatin (grass fed)
Gelatin is rich in the amino acids glycine and proline, which are important for connective tissue health. From a naturopathic perspective, gelatin may support:
Gut lining integrity, Healthy digestion, Skin, hair and nail health, Joint and connective tissue function
It also gives the gummies their chewy texture without the need for artificial ingredients.
Lemon Juice (Optional)
Lemon juice provides a small amount of vitamin C and adds a fresh flavour. Traditionally, vitamin C-rich foods are valued for their role in supporting healthy immune function and antioxidant protection.
Delicious Flavour Variations:
Elderflower & Honey Gummies
For a more floral, traditional herbal flavour:
Replace ¼ cup of the elderberry syrup with strong elderflower tea.
Add 1–2 tablespoons raw honey to taste.
Benefits: Elderflower has traditionally been used to support the respiratory system and encourage healthy sweating during winter illnesses. Raw honey provides soothing support for the throat and contains beneficial plant compounds.
Mixed Berry Gummies
For a sweeter, fruitier gummy that children love:
Replace ¼ cup of the elderberry syrup with unsweetened blueberry, raspberry or mixed berry juice.
Benefits: Berries are rich in antioxidants, particularly anthocyanins, which help protect cells from oxidative stress while complementing the benefits of elderberry.
Orange Immune Gummies
Replace ¼ cup of the elderberry syrup with fresh orange juice.
Benefits: Orange juice adds natural vitamin C and a bright citrus flavour that pairs beautifully with elderberry.
Apple & Cinnamon Gummies
Replace ¼ cup of the elderberry syrup with cloudy apple juice.
Add ¼ teaspoon cinnamon powder.
Benefits: Apple provides natural sweetness and pectin, while cinnamon offers antioxidant support and a warming digestive action.
Ginger & Lemon Gummies

Increase lemon juice to 1 tablespoon.
Benefits: Ginger has traditionally been used to support circulation, digestion and immune health, while lemon adds freshness and additional antioxidant compounds.
