Everyday Vanilla Muffins
free from gluten,diary,refined sugar,soy(optional), nuts (optional depending what milk you choose)
We've been baking these muffins on repeat lately - they’ve become a little kitchen staple in our home. I make them in cupcake size for school lunchboxes, just right for little hands and tummies. With the season bringing its share of coughs and sneezes, I’ve been leaning into gentle, healing foods - no gluten, no dairy, and less sugar. It’s my way of easing the load on the body and keeping the sniffles from settling in. These muffins are just sweet enough to feel like a treat, but kind to the system too. The recipe itself is simple as can be, and easily made vegan if needed. We usually use eggs from our own chooks, which gives them a lovely fluffiness - there’s something extra comforting about that.
